Default Potato Salad

Anyone have a great potato salad recipe? I'm trying to eat a lot more home-made stuff and I was planning to have potato salad etc this Sunday for guests... Thanks

we really like ours but it's very simple... cut up potatoes and cook. put in bowl. cool. add chopped spring onion. add fake bacon pieces (i think they're soy). add real, whole egg mayonnaise. mix. eat.

cheers.

I'll have to skip the whole egg mayonaise as it contains raw egg and I'm preg, but it sounds nice. (I also might add some real bacon too) :-)

I leave the skin on the spuds and once cooked I add sesame seed/garlic/salt mix then mayo (soy one). simple but yummy. I like to add it while they are hot cos they soak it up then.

Yaf are they little reddy coloured bits? I have a bag of them but hated them so if you want them you can have them.

My best friend's is lovely. She uses low fat mayonaise, bacon chopped into long thin slices, a couple of chopped shallots (green bits only I think) and a couple of hardboiled eggs cut in half. It's wonderful!

We have our salad with the red pontiac potatoes steamed until tender (in nice big chunks) , finely sliced green shallots .. grill some procuitto (sp?) or bacon until crispy.. add all together.. and use 1/2 light sour cream, 1/2 mayo as a dressing.

YUM!

Yeah I was going to suggest sour cream instead of mayo. Our potato salad varies depending on our mood., and what's in the fridge/herb garden. Sweet potato is yum in a salad too.

I like the colour of the red-skinned potatoes in a salad when you leave the skin on...
