I've been searching for, cooking and trying a BIG range of allergy-free recipes of later for our little girl and family. Thought I'd share 2 that have gone down well in the past week.... Pumpkin Cookies INGREDIENTS: 2 1/2 cups flour of choice 1 tsp cinnamon 1/2 tsp baking soda 2 1/2 tsp baking powder 1/4 tsp salt 1 cup sugar 1/2 cup margarine 1/4 cup pure maple syrup 1 tsp vanilla 1 cup mashed pumpkin mash Preheat oven to 190 degrees. Combine flour, cinnamon, baking soda, baking powder and salt. Cream together, sugar and margarine, then gradually beat in maple syrup, vanilla, and pumpkin. Add and beat in flour mix. Drop onto baking sheet and bake 8 minutes. These bikkies are chewy. They don’t stay very fresh for long, but freeze really well. Gingernut Biscuits Ingredients: 50g Nuttelex 4 tbsp Golden Syrup 50g Brown Sugar 175g Gluten Free Self Raising Flour Half teasp Ground Ginger (recipe said 1teasp, but I toned it down) Instructions 1. Preheat the oven to 190C and lightly grease two baking sheets. 2. Melt the butter, syrup and sugar together in a large saucepan, cool slightly then sift flour and ginger into the sugar mixture. Mix well. 3. Place walnut size balls of the mixture well apart onto the baking sheet, flatten a little and bake for 15-20 minutes. Cool on a wire rack. Hope they help someone else who, like me, gets desperate for a change every now and then! ENJOY!
