    Default Looking for lentil recipes

    I'm looking for a nice lentil recipe that is not a soup or stew. Maybe chili? Does anyone have a nice recipe they wouldn't mind sharing?

    I cook the lentils in a pot on the stove til they're soft, then drain and keep in the fridge for a few days to use as needed. Sometimes I add cooked lentils to curry, or in place of mince meat for spag bog.

    I sometimes make lentil vegie patties for vege-burgers. There's no recipe. Just chuck a cup of cooked lentils, some breadcrumbs, a small handful of psyllium husk, and an egg (or egg replacer) in the food processor and whizz til it resembles dough. Then mix in some vegies (peas, diced zucchini or carrot, corn kernels etc). Fry a few minutes each side til golden brown. Smaller, flatter patties cook through better than bigger, thicker ones.

    some good ideas there emd! i might have to give some a go i'm not vegetarian anymore, but i dont really feel comfortable giving my 9mo DD minced up meat just yet (i figure she'll be ready to digest it when she is able to chew it up herself) so its good to find some more ideas for pulses to give her in place of meat

    I've also got a lentil pattie recipie. It has evolved a few times and they're now delicious! & a made up shepards pie one (lentils & veg instead of mince). I'll be back when I have two hands. Sleepy feeding bub in one arm right now so this typing taking ages! Oh and a lentil curry - also made up

    Oh yes, lentil shepherds pie! That's what I was eating the night I went into labour with DS

    Also spaghetti "bolognaise" with lentils instead of mince. For example, we might have a jar of sauce, tin of lentils, grated carrot / zucchini, mushrooms, herbs, splash of cream at the end.

    Does dahl count as a stew? Cook red lentils in water & vege stock, add some onion, spices like paprika & cumin (not a lot if bubs is eating as these are stimulating spices), grate pumpkin through it, serve with brown rice or whatever you prefer.

    This is a sweet potato & Lentil chili recipe of a British friend of mine... I've done this with great success in the crockpot too:
    Ingredients
    1 onion, finely chopped
    1 yellow pepper, finely chopped
    1 courgette finely chopped
    1 carrot finely chopped
    2 cloves of garlic crushed
    2 sticks of celery, chopped
    300g of cubed sweet potato
    1 cup of green lentils
    750ml of vegetable stock
    350ml of passata
    1 tablespoon of tomato puree
    2 tablespoons of chilli powder
    1/2 teaspoon of cumin
    1/2 teaspoon of allspice
    1 teaspoon of paprika
    splash of balsamic vinegar
    Frylight or Pam Spray
    to serve:
    Fat Free Natural Yoghurt
    Method
    Spray a large saucepan with Frylight or Pam Spray.
    Add the onion, garlic, celery, courgette, yellow pepper, and sweet potato and cook for approx 5-6 mins until softened. Add a little bit of the stock if needed.
    Add in the chilli powder, cumin, paprika and allspice and stir to coat.
    Pour in the vegetable stock, passata, tomato puree and lentils and bring to the boil.
    Add a splash of balsamic vinegar, reduce the heat, cover, and simmer for approx 1.5 – 2 hours, lentils should be nice and tender, as should all vegetables.
    This is great served with rice or a jacket potato and a dollop of natural yoghurt on top. Or if you have a HEa spare, you could top with some grated cheddar cheese.

    I usually soak my lentils before I cook them. Makes them quicker to cook, and also easier to digest. We use lentils and chickpeas or beans to make taco mix. Just make it exactly the same but with pulses instead of meat. It's yum

    Lentil Patties

    approx 250 gms lentils (I soak, cook until soft then drain)
    2 carrots approx
    5 tbsp wholemeal flour (add more if too wet at end)
    1 1/2 cups rolled oats
    3/4 cup sunflower seeds
    1/3 cup sesame seeds
    3 tbsp curry powder
    1 - 2 tbsp oregano
    1 large egg (egg replacer ok - 1 big eggs worth)
    1 1/2 tbsp sweet soy sauce
    1 1/2 tbs tamari
    1 1/2 tbs miso
    1 1/2 tbs honey
    1 tbs applejuice concentrate
    2 tbsp hot water

    mix together all wet ingredients with hot water, stir until miso, honey soy sauce etc combined

    add this mix to all other ingredients in a big bowl and stir until all mixed through

    form into patties, flatten and cook until brown on both sides and cooked through.

    Can be frozen. I usually freeze uncooked and then defrost and cook as required.

    OK, 'Spicy Lentils' - the easiest recipe in the WORLD!! Well, maybe a slight exaggeration, but ykwim

    1cup soaked red lentils or 1-2 tins lentils, rinsed n drained
    1 onion
    1 garlic clove
    1 tin diced toms
    1 tspn - 1Tbspn Curry paste (we use Sharwoods Madras curry paste)
    1tspn cumin seeds
    handful corinader
    yoghurt n baked pita chips to serve

    fry onion n garlic till soft, add seeds n paste n stir till fragrant
    add tomato, & lentils & cook for about 20 mins or until lentils are soft (sometimes I steam them first then I just cook for about 5 mins)
    Serve with coriander, & yoghurt on top and scop up with pita chips. YUM! The kids love this (they're 5&6). We use about 2tspns paste for them which is quite spicy
