    Roll Eyes Cupcake recipe please!

    I cant believe it. I said I would make cupcakes and i cant find a recipe anywhere- not even online - well only ones that have oz measurements.

    Does anyone have an easy one for me PLEASE tia

    its ok I just remembered that they are called Patty cakes over here, found some recipes now and we are baking away

    Wacky cake
    (dairy/egg free) - do as whole cake or muffins or patty cakes

    1 1/2 cups wholemeal self raising flour
    1 cup brown sugar
    3 tbs cocoa (for choc-free add 1/2 tps powdered ginger + 1/2 tps cinnamon + 1/2 tps ground cloves)
    1 tps bicarb soda
    1 tps vanilla extract (preservative free) - not cheap but really worth it.
    5 tablespoons oil (I use good quality olive oil)
    1 cup cold water.

    Put all dry ingredients in a bowl. Mix all wet ingredients separtely and then add to dry ingreds. (you don't have to electric mix it or anything...really easy. just beat a few times with a spoon).
    Bake 20-30 mins at 180.
    I usually do this recipe as muffins, usually takes about 12mins. They are so moist.

    I just make cake and either cook it in a big tin or small tins LOL. But Nigella has a gorgeous recipe for little cakes that always works brilliantly and is SO easy!

    oh poo I knew you'd say that

    I have always had total success with these. Anyone who's been to one of Conor's birthday parties can vouch for it!

    125gm unsalted butter, softened
    125gm caster sugar
    2 large eggs
    125gm SR flour
    1/2 tsp vanilla extract
    2-3 tablespoons milk

    Preheat oven to 200C.

    Put everything in the blender/food processor till smooth. About 1 minute in my experience! Pulse and add dribbles of milk till you get a dropping consistency. Stick into 12 cases or however many you like for smaller cakes.
    Bake 15-20 mins. IME the cooking time decreases with each batch as the oven heats up.

    I cut the tops off to flatten them for decoration plus I get to eat them : )

    This is from "How to be a Domestic Goddess" which probably isn't something most of you associate with me

    Bloody great cakes though! I can cook 100 in an afternoon. So easy!!!
